Abstract

The crosssectional descriptive research was to study the food sanitation
situation in the mobile market, Phuwiang District, Khon Kaen Province. The
sample size was 50 stalls. The data collection tools included questionnaire,
observations form, and detection of coliform bacteria with SI2 test kit in 50
food samples, food utensil 50 samples, food handlers 50 samples, and ice
20 samples. Study conducted between December, 2016 to June, 2017.
The results showed that food stalls in the mobile Phuwiang district
market did not standard of food sanitation of mobile market 54.0% to
96.0% of stalls. They did not standard of food sanitation of mobile market,
such as took drinking water or ice by cup directly at 96.0 %, did not collect
garbage / food waste in trash or bag, 92.0 %, food handlers had long nail /
nail coloring / fingernail dirty or did not annual health examine 88.0%, did
not use the join spoon for cooking/ tasting/ scooping the food 86.0%, did
not stop work when they were sick with communicable diseases and 80.0%
etc. The overall knowledge of entrepreneurs was low level 88.0%, mean ±
sd equal 40.30±12.936 such as vegetables, fruits and meat can be collected
together or use hand contact the part of spoons, fork, chopsticks to contact
the mouth 58.0 %. The dishwasher can be placed on the floor was 56.0 %,
Ice used to consume can be soak other thing 52.0 %. The food handlers
had wound on hand covered with plaster and gloves or food suppliers who
suffer from diarrhea should not cook 50.0 % etc. The overall practice of
entrepreneurs was low level 92.0%, mean±sd equal 50.53±4.356. The
coliform bacteria contamination did not standard in food samples 19.0 %,
consume ice samples 25%, food utensils samples 18%, and hands of food
handlers 19.0%
