The Development of Health Behavioral Change of Food Consumption and Nutrition Labels Reading among Chronic Disease Patients in Ban Pa Hiang Community, Bo Haeo district Sub-district, Mueang District, Lampang Province

This study was a mixed method research that aimed to develop guidelines for behavioral changes in food consumption and nutrition label reading, and to evaluate the results of the guideline.This research was divided in 3 phases; phase 1, analysis of the situations related to health behavioral problems of patients with chronic disease using medical records and focus group between patients and health care providers; phase 2, development of guidelines for behavioral changes prevention among patients with chronic disease by conducting in-depth interviews with 20 community leaders and using the developed data for chronic disease patients; and phase 3, evaluation of the results of the developed guidelines conducted with 100 patients using knowledge and behavioral questionnaires, and lessons learned within the duration of the development of the guidelines.Data were collected by questionnaires and after-action review. The quantitative data were analyzed by using percentage, mean, standard deviation, and paired t-test, while the qualitative data were analyzed using content analysis.
The guidelines consisted of the following; 1) training to provide knowledge on behavioral changes by groups rotating in different stations; 2) creating a strong leadership in the implementation of education and home visit, tracking food intake, and reading the correct nutrition label;3) establishing a community consumer protection agency that proactively provides services and public relations continuously; 4) creating an environment that is conducive to health behavior; and 5) using technology to check food nutrition label information correctly via mobile phone.After using the developed guidelines, results showed that the participants had higher scores on knowledge, eating behavior, and reading nutrition labels as compared to their scores before attending the training with a statistical significance at 0.5. Furthermore, based on the lessons learned from the changes in dietary habits and nutrition label reading in groups with chronic disease, there should be a continuous participation of the community in stimulating behavioral changes by promoting the creation of an environment within the area that is conducive to health and utilizing technology wisely to check nutrition labels accurately.
