การพัฒนาแบบสอบถามการบริโภคอาหารเพื่อใช้ประเมินประสิทธิภาพการบดเคี้ยวของผู้ที่ใส่ฟันเทียมทั้งปาก

บทคัดย่อ
การศึกษานี้มีวัตถุประสงค์เพื่อพัฒนาแบบสอบถามการบริโภคอาหารสำหรับประเมินประสิทธิภาพการบดเคี้ยวของผู้ที่ใส่ฟันเทียมทั้งปาก รวมทั้งทดสอบความตรงและความเที่ยงของแบบสอบถามการบริโภคอาหารที่พัฒนาขึ้น โดยพัฒนาแบบสอบถามการบริโภคอาหาร 20 ชนิด ซึ่งประกอบด้วยอาหารที่มีความถี่ในการบริโภคสูงสุด 14 ชนิดจาก 4 กลุ่มอาหาร และอาหารที่ผู้ที่ใส่ฟันเทียมทั้งปากเคี้ยวได้ยากหรือเคี้ยวไม่ได้เลยอีก 6 ชนิด นำแบบสอบถามการบริโภคอาหารไปประเมินประสิทธิภาพการบดเคี้ยวของผู้ที่ใส่ฟันเทียมทั้งปากจำนวน 30 คน กลุ่มตัวอย่างประเมินความยากในการบดเคี้ยวอาหาร 20 ชนิดด้วยมาตรวัดลิเคิร์ท 3 ระดับ เพื่อหาคะแนนประสิทธิภาพการบดเคี้ยว และประเมินความพึงพอใจต่อฟันเทียมทั้งปากในการบดเคี้ยว ทดสอบความตรงเชิงสอดคล้องของแบบสอบถามการบริโภคอาหารโดยพิจารณาความสัมพันธ์ระหว่างประสิทธิภาพการบดเคี้ยวและความพึงพอใจในการบดเคี้ยว ทดสอบความเที่ยงภายในและความเที่ยงจากการทดสอบซ้ำของแบบสอบถามการบริโภคอาหารด้วยสัมประสิทธิ์แอลฟาของครอนบาคและสัมประสิทธิ์สหสัมพันธ์ภายในชั้น ผลการศึกษาพบว่าประสิทธิภาพการบดเคี้ยวของผู้ที่ใส่ฟันเทียมทั้งปากมีความสัมพันธ์ในทิศทางบวกกับความพึงพอใจในการบดเคี้ยวอย่างมีนัยสำคัญทางสถิติ (r=0.597, p=0.001) แบบสอบถามการบริโภคอาหารมีค่าสัมประสิทธิ์แอลฟาของครอนบาคเท่ากับ 0.863 และสัมประสิทธิ์สหสัมพันธ์ภายในชั้นเท่ากับ 0.967 จากผลการศึกษาสรุปได้ว่าแบบสอบถามการบริโภคอาหารที่พัฒนาขึ้นในการศึกษานี้มีความตรงและความเที่ยงที่เหมาะสม สามารถนำไปใช้ประเมินประสิทธิภาพการบดเคี้ยวของผู้ที่ใส่ฟันเทียมทั้งปาก
