Effect of Food Sanitation Promotion program on Food Sanitation Implementation and Coliform Bacteria Contamination in Primary School, Roi-Et Municipality

Purposes : To compare the sanitation practices in school cafeterias and examine the contamination of coliform bacteria in elementary schools, Roi-Et municipality.
Study design : Qua-si experimental study; One group pre-test post-test design.
Materials and Methods : The sample group comprised 105 food handlers, ready-to-eat food items, drinking water, and food-serving utensils in elementary schools under the Roi Et municipality. The study was conducted from March to June 2023. Data were collected using interviews, surveys, record forms and coliform bacteria detection equipment (SI2). The data were analyzed using frequency, percentage, mean, standard deviation and % Differences.
Main findings : After the intervention, the overall sanitation standards in the school cafeterias within the sample group improved by 39.29%. The results of coliform bacteria contamination testing, conducted using the SI2 coliform bacteria detection solution, revealed that 40 food handlers (38.1%) had coliform bacteria contamination on their hands. Additionally, contamination was found in 61 instances (65.60%) of utensils and equipment (plates and compartment trays), 52 instances (53.10%) of food items (fresh vegetables), and 36 instances (81.80%) of drinking water samples from filtered tap water in the schools.
Conclusion and recommendations : The results of this study led to improved sanitation practices in school cafeterias and a reduction in food contamination.
