Health Literacy in Dietary Management among Stage III Chronic Kidney Disease Patients in Ubon Ratchathani Province

This cross-sectional descriptive research aimed to explore health literacy related to dietary management among stage 3 chronic kidney disease patients in Ubon Ratchathani Province, Thailand. A sample of 194 patients with stage 3 chronic kidney disease in Ubon Ratchatani province were selected through multi-stage random sampling. The research instruments included a health literacy in dietary management questionnaire. The instrument’s index of item-objective congruence for content validity (IOC) was 0.86 and the reliability of the instrument (Cronbach's Alpha coefficient) was 0.87. The data were analyzed using descriptive statistics, such as frequency distributions, percentages, means, and standard deviations.
The results of the study displayed that patients had a moderate level of the six skills related to health literacy in dietary management, namely cognitive skills, decision skills, self-management skills, access skills, communication skills. and media literacy skills. This research results can be utilized to design applicable healthcare plans for enhancing health literacy in dietary management for stage III CKD patients that will certainly delay the decline of their kidney function and prevent further complications.
