Abstract

This study aims to evaluate the interesting properties of pomegranate juice and peel extracts, focusing on the investigation of antioxidant activity and oral bacteria inhibition, specifically Anthocyanins found in the juice and peel, such as Cyanidin-3-Glucoside and Malvidin. The extraction process and analysis were performed using High-Performance Liquid Chromatography (HPLC).

The experimental results revealed that the highest concentration of Cyanidin-3-Glucoside was 0.310±0.01 mg/mL, and that of Malvidin was 0.768±0.008 µg/mg. Additionally, the highest concentration of phenolic compounds in the sample extract was found to be 343.63±32.14 mg GAE per 100 grams. The study also found that the sample extract showed antibacterial activity against two bacteria: Staphylococcus aureus and Aggregatibacter actinomycetemcomitans. Furthermore, the preliminary antioxidant study showed low levels of antioxidants, indicating the need to refine the extraction process to increase the concentration.

The trend of using pomegranate extract shows promising potential for effective bacterial inhibition.
