Abstract
This study aims to determine the concentration of synthetic food color named Ponceau 4R and its risk to consumer from consumption of Yentafo-noodle soups.Seventy-two noodle soups were sampled from the registered and non-registered food establishments in Bangkok,which were 36 samples for each. The samples were determined for Ponceau 4R using the In-house method TM-CH-027 based on Compendium of method for food analysis 1st Edition,2003. The estimated concentrations found in samples from both groups ranged from 0.2 to 20.30 mg/kg with a mean (SD) of 3.42 (3.55) and 0.2 to 18.30 mg/kg with a mean (SD) of 3.62 (3.63),respectively. There were no significant differences of Ponceau 4R concentration in Yentafo noodle between both groups.In addition, the concentrations were not exceeded the maximum allowanced level (50 mg/kg) which regulated by the Food and Drug Administration standard of Thailand. Compared to the ADI of JECFA and EFSA the risk estimations of Ponceau 4R were lower than 1 or 100% ADI. It is concluded that under the scenarios of risk calculation,the Yentofo - noodle soups are safe for consumption.
