การเปรียบเทียบความสามารถต้านอนุมูลอิสระรวมของมัทฉะลาเต้ที่ชงด้วยนมประเภทต่างๆ

มัทฉะลาเต้เป็นเครื่องดื่มยอดนิยมในกลุ่มผู้บริโภคที่ใส่ใจสุขภาพ เนื่องจากมัทฉะมีสารคาเทชินที่มีฤทธิ์ต้านอนุมูลอิสระ อย่างไรก็ตาม องค์ประกอบของนมแต่ละประเภทอาจส่งผลต่อความสามารถต้านอนุมูลอิสระของมัทฉะผ่านปฏิสัมพันธ์ระหว่างโปรตีนกับโพลีฟีนอล งานวิจัยนี้มีวัตถุประสงค์เพื่อเปรียบเทียบค่าความสามารถต้านอนุมูลอิสระรวมของมัทฉะลาเต้ที่ชงด้วยนมประเภทต่าง ๆ ภายใต้สภาวะการชงใกล้เคียงการบริโภคจริง การศึกษานี้เป็นการวิจัยเชิงทดลองในห้องปฏิบัติการ โดยใช้ผงมัทฉะยี่ห้อเดียวชงร่วมกับนมวัว นมโอ๊ต นมอัลมอนด์ และนมถั่วเหลือง ประเภทละ 3 ยี่ห้อ และมัทฉะที่ชงด้วยน้ำเป็นกลุ่มควบคุม รวมทั้งหมด 13 ตัวอย่าง ความสามารถต้านอนุมูลอิสระรวมวัดด้วยวิธี Oxygen Radical Absorbance Capacity (ORAC) และวิเคราะห์ด้วยสถิติ one-way ANOVA และ Tukey’s HSD ผลการศึกษาพบว่ามัทฉะลาเต้ที่ชงด้วยนมแต่ละประเภทมีค่า ORAC แตกต่างกันอย่างมีนัยสำคัญทางสถิติ (p < 0.05) โดยนมวัวให้ค่า ORAC สูงที่สุด (5,465 µmol TE/L) ขณะที่มัทฉะที่ชงด้วยน้ำให้ค่าต่ำที่สุด (2,192 µmol TE/L) และนมถั่วเหลือง นมโอ๊ต และนมอัลมอนด์ให้ค่าใกล้เคียงกัน ผลการศึกษานี้ชี้ว่าประเภทของนมมีผลต่อความสามารถต้านอนุมูลอิสระของมัทฉะลาเต้ และข้อมูลที่ได้อาจใช้เป็นแนวทางสำหรับผู้บริโภคและผู้ประกอบการคาเฟ่ในการเลือกนมเพื่อคงคุณค่าด้านสารต้านอนุมูลอิสระของมัทฉะ
