การพัฒนาผลิตภัณฑ์เวจจี้นักเก็ตเพื่อสุขภาพจากถั่วขาว (Phaseolus vulgaris L.)

บทคัดย่อ

          งานวิจัยนี้มีวัตถุประสงค์เพื่อศึกษาผลของระยะเวลาในการแช่น้ำและการให้ความร้อนต่อคุณสมบัติทางเคมีของถั่วขาว และพัฒนาสูตรของผลิตภัณฑ์นักเก็ตเวจจี้เพื่อสุขภาพจากถั่วขาว ผลจากการศึกษาพบว่า ถั่วขาวที่แช่น้ำนานขึ้นจาก 5 ชั่วโมง เป็น 10 ชั่วโมง ส่งผลให้ปริมาณความชื้นเพิ่มขึ้นอย่างมีนัยสำคัญทางสถิติ (P≤0.05) นอกจากนี้เมื่อนำถั่วขาวมาต้มในน้ำเดือดเป็นเวลานานขึ้นจาก 30 นาที เป็น 50 นาที ยังส่งผลให้ปริมาณโปรตีนและความชื้นเพิ่มขึ้นอย่างมีนัยสำคัญทางสถิติ (P≤0.05) ดังนั้นการเตรียมถั่วขาวก่อนนำไปใช้เป็นส่วนประกอบในการพัฒนาผลิตภัณฑ์เวจจี้นักเก็ตจากถั่วขาวจะถูกนำมาแช่น้ำ 5 ชั่วโมง และต้มในน้ำเดือด 50 นาที จากการศึกษาอิทธิพลของส่วนผสมในการพัฒนาผลิตภัณฑ์นักเก็ตถั่วขาวด้วยการออกแบบการทดลองแบบผสมพบว่า ปริมาณส่วนผสมของถั่วขาว แป้งสาลี และแป้งข้าวโพดมีผลต่อคุณสมบัติทางกายภาพ และการทดสอบทางประสาทสัมผัสของผลิตภัณฑ์นักเก็ต โดยปริมาณถั่วขาวที่เพิ่มขึ้นส่งผลให้ค่าความสว่าง (L*) ความเป็นสีแดง (a*) และความเป็นสีเหลือง (b*) ลดลง นอกจากนี้ยังส่งผลให้ค่าความแข็ง (Hardness), การติดยึด (Adhesiveness), การเชื่อมติด (Cohesiveness) และความหนึบ (Chewiness) ลดลง รวมทั้งส่งผลให้ค่าคะแนนความชอบด้านลักษณะปรากฏ รสชาติและความชอบโดยรวมเพิ่มขึ้น ดังนั้นสูตรที่เหมาะสมของผลิตภัณฑ์นักเก็ตประกอบด้วยถั่วขาวร้อยละ 59.5 แป้งสาลีร้อยละ 17 และแป้งข้าวโพดร้อยละ 8.5
