Effects of a Family Participatory Nutrition Literacy Promotion Program on Nutrition Literacy, Dietary Behavior, Food Security, and Health Outcomes among Older Adults with Noncommunicable Diseases

Abstract

This experimental research aimed to examine the effect of a nutrition literacy program with family participation on nutrition literacy, dietary behavior, food security, and health outcomes in older adults with non-communicable diseases. The sample group of 68 subjects was assigned to experimental groups (n = 34) and control groups (n = 34) by simple randomization. The instruments used were the nutrition knowledge questionnaire, the dietary behavior questionnaire, and the food security questionnaire, with reliability values of .98, .71, and .72, respectively. Data were analyzed using MANOVA and repeated MANOVA.

The results of the study showed that the scores for nutrition literacy, dietary behavior, and health outcomes specifically, body mass index and waist circumference in the experimental group after the intervention and during the follow-up period were significantly higher than those of the control group (p < .05). Additionally, the scores for nutrition literacy, dietary behavior, food security, and health outcomes-specifically, body mass index-in the experimental group after the intervention and during the follow-up period were significantly higher than before the intervention (p < .05).  Therefore, it is recommended that public health personnel use the nutrition literacy program with family participation as a guideline to improve dietary behavior, food security, and health outcomes among the elderly, in order to sustainably control and reduce complications from non-communicable diseases.
