Abstract

The purposes of this descriptive research were to study food sanitation management of restaurants, compare the differences in food sanitation management of restaurants classified by personal factors and food sanitation knowledge factors, and also examine the relationship between personal factors, food sanitation knowledge factors and food sanitation management of restaurants. The samples were 218 restaurant operators registered for licenses with Sila Municipality, Mueang district, Khon Kaen province (100% of the population). The research tool was a questionnaire with its reliability of .872. Data were analyzed using descriptive statistics including frequency, percentage, mean, standard deviation, and testing research hypothesis using t-test, one-way ANOVA and Chi-Square. The results showed that the majority of the sample was male (53.2%), had education below bachelor's degree (73.4%), aged between 30-50 years (56.9%), had income between 15,000-30,000 baht (40.8%), and had 3-5 years of experience (39.4%). Overall food sanitation management in restaurants was at a high level. Comparison results of food sanitation management differences indicated that no significant difference by gender (females having a higher mean than males), age, education (bachelor's degree and higher having a higher mean than those below bachelor's degree), knowledge about food sanitation management and cause of disease, while significant difference by knowledge about nutrition, attitude of cooking, income and experience at 0.05 level.
