บทคัดย่อ

西红花 หรือ หญ้าฝรั่น (Crocus Sativus L.) มักถูกนำไปใช้ในการผสมอาหาร ถนอมอาหาร และเป็นยา ในทางการแพทย์แผนจีน หญ้าฝรั่นมีรส หวาน สุขุม เข้าเส้นลมปราณ หัวใจ ตับ มีฤทธิ์ในการกระตุ้นการไหลเวียนของเลือด สลายเลือดคั่ง คลายเครียดสงบจิตใจ ระบายความร้อนในเลือด ขับพิษ มีการบันทึกวิธีใช้งานของหญ้าฝรั่นมาอย่างยาวนาน โดยในเอเชียตะวันออกและยุโรปตะวันออกมีการใช้ในการประกอบอาหาร การย้อมผ้า และเป็นยาสมุนไพร โดยมีสารประกอบออกฤทธิ์ที่สำคัญ เช่น safranal, crocin, picrocrocin และ crocetin เป็นต้น สารเหล่านี้มีฤทธิ์ในการต้านอนุมูลอิสระ ต้านการอักเสบ ต้านมะเร็ง เป็นต้น ในบทความนี้จะรวบรวมสารออกฤทธิ์และกลไกการออกฤทธิ์สำคัญต่างๆ ที่เกี่ยวกับการต้านการอักเสบและต้านมะเร็งในหญ้าฝรั่น
