ภูมิปัญญาและปัจจัยพยากรณ์การบริโภคผักพื้นบ้านเพื่อการสร้างเสริมสุขภาพผู้สูงอายุ ชุมชนสะลวง - ขี้เหล็ก อำเภอแม่ริม จังหวัดเชียงใหม่

บทคัดย่อ
การศึกษาเชิงผสมผสานวิธีนี้มีวัตถุประสงค์เพื่อศึกษาภูมิปัญญาผักพื้นบ้านเพื่อการสร้างเสริมสุขภาพ และพยากรณ์ปัจจัยที่มีความสัมพันธ์กับการบริโภคผักพื้นบ้าน กลุ่มตัวอย่างเป็นผู้สูงอายุในชุมชนสะลวง - ขี้เหล็ก อำเภอแม่ริม จังหวัดเชียงใหม่ จำนวน 300 คน โดยการสุ่มแบบหลายขั้นตอน และผู้มีส่วนได้ส่วนเสีย จำนวน 12 คน เก็บรวบรวมข้อมูลด้วยการวิจัยเอกสาร แบบสอบถาม การสัมภาษณ์แบบไม่เป็นทางการ และการสนทนากลุ่ม วิเคราะห์ข้อมูลโดยใช้สถิติเชิงพรรณนา
การวิเคราะห์การถดถอยเชิงเส้นแบบพหุ และการวิเคราะห์เชิงเนื้อหา ผลการศึกษา พบว่า ภูมิปัญญาผักพื้นบ้านของผู้สูงอายุประกอบด้วยการเพิ่มพื้นที่การผลิต การใช้ประโยชน์ และการอนุรักษ์ ผู้สูงอายุมีการบริโภคผักพื้นบ้านเพื่อการสร้างเสริมสุขภาพโดยรวมเฉลี่ยระดับปานกลาง (ค่าเฉลี่ย 2.77) โดยปัจจัยที่มีความสัมพันธ์กับการบริโภคผักพื้นบ้านเพื่อการสร้างเสริมสุขภาพ ได้แก่ อายุ (β = -.149 , p = 0.006) จำนวนสมาชิกในครัวเรือน (β =.133 , p = 0.011) และการรับรู้ประโยชน์การบริโภคผักพื้นบ้าน (β =.046 , p = 0.000) พยากรณ์การบริโภคผักพื้นบ้านเพื่อการสร้างเสริมสุขภาพของผู้สูงอายุ อย่างมีนัยสำคัญทางสถิติที่ 0.05 ทั้งนี้การส่งเสริมการบริโภคผักพื้นบ้านอาจต้องพัฒนาระบบผ่านเครือข่ายชุมชนเพื่อให้เกิดการเข้าถึงผักพื้นบ้านที่ปลอดภัยอย่างเท่าเทียมภายใต้วิถีการบริโภคตามแบบวัฒนธรรมล้านนา ทั้งนี้การส่งเสริมให้เกิดการประยุกต์ใช้ด้วยข้อมูลที่เป็นจริงทางวิทยาศาสตร์อาจจะช่วยให้ภูมิปัญญานี้ไม่สูญหายไปกับกระแสการบริโภคสมัยใหม่
